Cooking roast slowly at a low temperature while basting the meat with its own juices from the bottom of the pan will give you a more tender, moist pot roast. Rest the meat on a cake rack placed on top on a roasting pan filled with vegetables.

The vegetables will cook in the juices dripping from the meat. Allow the roast to stand for another 20 minutes after removing it from the oven before you carve the meat and serve.
