How to Cook Tenderloin
When cooking tenderloin, quickly brown the tenderloin in a large, heated skillet before cooking in the oven. Rub the meat with olive oil and sprinkle with salt and pepper before browning. After browning tenderloins in a skillet, brush on some Dijon mustard before placing in a roasting pan that has been lightly oiled. Rub a mixture of olive oil, rosemary, dried thyme, and minced garlic over the roast. 
 
You can add mushrooms and sliced shallots to the bottom of the roasting pan along with 1/2 cup of red wine to use as a glaze later. How long to cook tenderloin depends on the size of the roast. A small 2 or 3 pound roast cooked to medium rare takes about 35 minutes to finish cooking or until a meat thermometer inserted in the center reaches 130 degrees Fahrenheit. Let the roast sit for at least 10 minutes after removing it from the oven. This allows the juices in the meat to settle and makes carving easier.

Pork tenderloin is another cut of meat that can be cooked quickly. However, because it is a lean cut of meat you do have to be careful not to overcook it. The small size of a pork tenderloin makes it a perfect meat to grill.
